While working at Buggy Town Coffee, this self-proclaimed Army brat would share gluten-free and vegan treats with her co-workers from recipes she had adapted on her own. With encouragement from her boss, Meg, Casey Burton began selling her gluten-free apple cider doughnuts at Buggy Town in this spring. And duh, they were a huge success.

Now retired from the glamorous life of a barista, Casey is continuously looking for ways to tweak the things that make you happy (aka chocolate and carbs). This includes milling her own gluten-free flour, a process we think sounds like witchcraft but she says is pretty easy.

What’s Casey doing when she isn’t taking a week to develop and perfect her own recipes? She’s helping bust bad guys as a sheriff’s deputy. Of course.
