That’s So Doppio

Brim, located in The Outpost building of Pinehurst, is currently in its soft opening phases. The new cafe is brought to you by Miah Magno and Daniel Gironda, who also own meal prep business OTG Fresh. “We feel super lucky, our staff is unbelievable,” says owner Daniel. Customers will find coffees, Italian cream sodas, infused Red Bulls, gelato, breakfast sandwiches, lunch sandwiches, pastries and more on the menu.

While most of the food is made in house, a good portion of the pastries come from Delucia’s Bake Shop in Seven Lakes, including the New York style bagels. “We were looking for the best bagels around and her name kept coming up. She actually ships her ingredients from New York,” says Daniel.

“We put a lot of thought into the menu,” says Miah. “We spent weeks only eating sandwiches just to test all the recipes.” Another offering the couple is particularly proud of is their espresso, which is imported from Italy along with the gelato. “We are espresso drinkers,” says Miah. “This kind doesn’t have that sour aftertaste, it’s really smooth.” For regular drip coffee, Brim is using local roasters Cactus Creek.

“We want to make sure our customers are as happy as they can be,” says Daniel, who wants the space to feel like “Pinehurst’s living room.” Currently, hours are 7:30 a.m. to 3 p.m. Monday through Friday and 8 a.m. to 3 p.m. Saturday through Sunday, but they plan to extend into later hours for folks to have an after dinner-coffee and dessert. They also plan to have live music on weekend evenings.

“Right now we are just in phase one. We want to keep adding,” says Daniel. A grand opening is set for Oct. 17. For updates, follow along on Instagram.
