:: 1/2 mashed ripe banana
:: 1/2c rolled oats
:: 1/2c unsweetened almond milk
:: 2 tbsp chopped pecans or walnuts
:: 1 tsp vanilla
:: 1/2 tsp cinnamon
:: 1 tbsp flax meal (ground flax seeds)
:: Drizzle of maple syrup
Mash the banana into a bowl and then add the rest of the ingredients and give it a good stir. Let sit in the refrigerator overnight and enjoy the next morning! These can be made a few days in advance as well. I usually make three on Sunday to get me through the first half of the week.
To avoid getting bored, these can be made in a variety of ways. Try using coconut milk and fresh raspberries; strawberries with some cocoa powder added; or even a carrot cake variety with grated carrot and a tablespoon of raisins. The options are customizable to your taste buds.
