Wisco Taco Foxtrot, or as we like to call it, WTF, officially opens this Thursday, Feb. 12. The cheeky aviation-themed restaurant serves up a variety of tacos, including Wisconsin-inspired fusions like cheese curd tacos or the fish fry taco, a nod to Fridays in Wisconsin. It has a full bar featuring the Wisconsin Old Fashioned, made with Brandy, the state’s most popular drink. Also on tap is the signature WTF Kristal Wiess Beir, created by Hugger Mugger in Sanford.

Owner and developer Jim O’Malley frequently travels between Wisconsin and here for a mix of business and pleasure, so you’ll see symbols from the Milwaukee airport scattered throughout the restaurant.

The piece we’ve seen the most questions about so far is the sign that reads “Recombobulation Area.” This exists in the Milwaukee airport, right after going through TSA when you have your shoes off, your pockets dumped, etc. It’s a designated area where you put yourself back together rather than standing in everyone’s way. 

To further set the vibe, TVs will be looping through old beer commercials ranging from the 1950s to early 2000s, which Jim purchased from a beer company back in WI. “They’re fun as can be,” says Jim. 

The dessert menu includes an apple pie empanada, served with a slice of cheese. That’s a nod to a long-defunct Wisconsin state law that required restaurants to serve butter and cheese with meals.

WTF also features a private room that can fit 24 folks, an outdoor patio with a fireplace, TV, heaters and a stage for live music. Hours will eventually expand but for now you can visit 4-9 p.m. Thursday through Saturday and noon to 8 p.m. Sunday. Find it at 300 Capital Drive, Carthage near the Moore County Airport.
