Lindsay O’Reilly of Tanglewood BnB has popped up in a new place: The Breakfast Truck. Every Monday and Tuesday from 11 a.m. to 8 p.m., Lindsay and her team will be hosting the “Tanglewood Takeover,” where they run the operations and a custom menu out of The Breakfast Truck posted up at Red’s Corner. Week-day warriors can expect a lighter fare — including soups, salads, sandwiches and homemade baked goods.

“I’ve always wanted to do food, and I didn’t know how that would look like,” says Lindsay. “When the opportunity came up, I couldn’t say no.”

The partnership came up during a day on the job. Lindsay was helping out with the food truck and thought it could be fun to do something on the days Stephanie was closed. Once the deal was solidified, she rolled up her sleeves and started planning what she’d bring to the community.

“It’s been overwhelmingly positive,” says Lindsay. “I had no idea what to expect, but it’s been fun dreaming up the menu.” The Tanglewood Takeover includes a soup with a homemade roll, a salad of the week, Stephanie’s signature Smashburger for the regulars and more.

Lindsay doesn’t plan to stop here. The week she started prepping for her first takeover, her home kitchen got approved for her cake business, Pony Cakes. She plans to continue to learn the ropes and incorporate more baked goods into her takeover. You can follow (and drool) along on Instagram by following @poppingup_bytanglewood.
